Холодная окрошка — одно из самых популярных блюд летнего сезона, ведь освежает оно не хуже, чем бокал мохито со льдом. 

Для тех, кто еще не готов распрощаться с летом и желает полноценно насладиться его неизменными атрибутами, MEN’s LIFE подготовил 5 рецептов действительно вкусной окрошки, которая точно приведет в восторг даже самых капризных ценителей традиционной домашней кухни. Рецепты легкие в приготовлении, которые осилит даже самый ленивый.

Классическая окрошка

ТОП-5 вариантов приготовления идеальной окрошки

Что понадобится:

— говядина — 300 г;

— квас — 1 л;

— картофель — 3 шт;

— редис — 5 шт;

— огурцы — 2 шт;

— яйца — 2 шт;

— сметана — 4 ст. л;

— укроп, петрушка и зеленый лук — по вкусу;

— соль, горчица — по вкусу.

Как готовить:

Говядину отвари до готовности.

Картофель промой, свари целиком, дай остыть и очисти от шкурки.

Яйца свари вкрутую и сними скорлупу.

Свежие овощи и зелень тщательно промой.

Теперь нарежь примерно одинаковыми кубиками говядину, картофель, яйца, огурцы и редис. Зелень измельчи.

Все составляющие переложи в глубокую емкость. Теперь добавь к ним сметану, посоли и залей квасом.

Хорошенько перемешай содержимое кастрюли и убери окрошку в холодильник не менее чем на 2 часа. Как только блюдо охладится, разлей его по тарелкам и подавай на стол.

Окрошка на кефире

Что понадобится:

— ветчина — 400 г;

— кефир — 1 л;

— редис — 200 г;

— картофель — 2 шт;

— огурцы — 2 шт;

— яйца — 2 шт;

— зелень, горчица и соль — по вкусу.

Как готовить:

Картофель помой и свари, после чего дай остыть и очисти.

Яйца свари вкрутую и освободи от скорлупы.

Огурцы и редис промой.

Ветчину, яйца и овощи нарежь кубиками средних размеров.

Зелень тщательно промой и измельчи.

Теперь высыпь все составляющие в подходящую емкость, вылей туда кефир (жирность выбирай на свой вкус) и посоли. Тщательно перемешай и убери в холодное место минимум на 40 минут. Готовую окрошку можешь разливать в тарелки.

Окрошка на минеральной воде

Что понадобится:

— ветчина — 100 г;

— вареный картофель — 2 шт;

— редис — 5-7 шт;

— вареные яйца — 2 шт;

— огурцы — 1 шт;

— сметана — 250 г;

— минеральная вода 2 л;

— лимон — 1 шт;

— укроп, зеленый лук и соль — по вкусу.

Как готовить:

Ветчину нарежь мелкими кубиками и положи в глубокую кастрюлю.

Хорошенько измельчи зелень и выжми на нее сок лимона, посоли и перемешай.

Мелко порежь две картофелины, оба яйца и огурец, а вот редис нужно потереть на средней или крупной терке.

Сметану соедини с литром газированной минералки, перемешай и влей в кастрюлю. Помешивая все ингредиенты, по чуть-чуть доливай остаток минеральной воды, пока не почувствуешь, что окрошка приобрела оптимальную густоту.

Охлади блюдо и подавай на стол.

Окрошка на сыворотке

Что понадобится:

— отварное мясо (любое на твой выбор) — 250 г;

— огурцы — 3 шт;

— вареные яйца — 4 шт;

— сметана — 450 г;

— сыворотка — 2л;

— зеленый лук, укроп и петрушка — по 1 пучку, но можешь положить и больше — зелень улучшает аппетит и вкусовые качества блюда;

— лимонный сок и соль — по вкусу.

Как готовить:

Все составляющие порежь кубиками, зелень измельчи, а зеленый лук можно дополнительно примять, чтобы он пустил сок. 

Выжми сок из лимона и сбрызни им блюдо.

Компоненты засыпь в глубокую емкость и смешай со сметаной.

Залей свежей сывороткой, добавь соль и перемешай.

Убери в холодильник до полного охлаждения.

Окрошка с рыбой

— отваренный картофель — 4 шт;

— вареные яйца — 4 шт;

— копченая скумбрия — 1 шт;

— свежие огурцы — 3 шт;

— редиска — 5 шт;

— соль и черный молотый перец — по вкусу.

Как готовить:

Картофель и яйца очисти и нарежь средними кубиками. Но не кроши слишком мелко, иначе холодный суп превратится в кашу. 

Свежие овощи промой и порежь точно так же, как и предыдущие ингредиенты.

Зелень тщательно измельчи.

Из копченой скумбрии по максимуму удали все кости и сними кожу. Филе аккуратно и мелко нарежь.

Рыбу и все остальные ингредиенты перемести в кастрюлю, добавь соль и перец по своему вкусу и залей квасом. Перемешай и убери в холодильник. Когда разольешь холодную окрошку по тарелкам, добавь ложечку сметаны и подавай на стол.

К слову, ты можешь не заливать все ингредиенты жидкостью сразу же. Для тех, кто любит регулировать густоту супов по собственному усмотрению, можно подавать гарнир из компонентов и жидкую заправку в отдельных емкостях. Единственный минус такого метода — окрошка не сможет настояться, а потому ее вкусовые качества будут немного отличаться. И не забывай, что ингредиенты для холодных супов могут храниться в холодильнике не более двух суток при условии, что они помещены в плотно закрывающиеся контейнеры.
